Sweet Potato Hash

This tasty savory Sweet Potato Hash, is the perfect side for many dinner meals, but also great served as breakfast, brunch, or lunch. My favorite time to have this is for brunch.

What Can I eat with this?

I love to pair this with some massaged kale, and some cherry tomatoes. But this also goes great as a barbecue side, along with some corn on the cob.

Do I need any special ingredients?

The most “special” ingredient you would need for this recipe is, chipotle pepper. This however, is totally optional and can be skipped completely. The chipotle pepper I use if from the, chipotle in adobo sauce cans. Here’s a quick tip for those chipotle in adobo cans. I like to open up a can of those and blend it all up, in the blender. Then I use any amount I want for a specific recipe and I freeze the rest. I simple pour the blended up chipotle pepper mix into a Ziploc bag and lay it flat in the freezer. That way I can easily break of a piece whenever I need some for a recipe.

How do you make this Sweet Potato Hash?

This recipe is so easy to make..

Step 1: Peel sweet potatoes

Step 2: Add oil into a skillet, and heat to medium heat. Toss in onion and pepper and cook for 3-4 minutes or until softened.

Step 3: Add in the sweet potato and spices and mix together. Cover and cook for 10-15 minutes or until the sweet potato becomes fork tender.

Finally: Remove from heat and add in green onion, and sliced basil. Mix, serve as you wish and ENJOY!

It’s that easy! That is really all there is to it and you can it this on its own, on a bed of greens, or as a side to your favorite dish.
