These vegan cheddar potato cakes are super comforting! They are like a little flavor explosion and this recipe also happens to include and delicious Chimichuri sauce! You can’t go wrong with this one, you just cant!

I have always had a strange obsession with making fritters, it might have something to do with being Caribbean, because naturally there is a lot of fried Caribbean food. Wether it’s ’Cheesy’ corn fritters, these cheddar potato cakes here, or latkes I just love a good fritter. That being said I try not to eat to much fried food which is why when I do, I make recipes like this, that make it so worth the wait!

What Is Chimichuri Sauce?

Chimichuri sauce is a mixture of parsley, cilantro, oregano, onion, and olive oil. It’s really simple and some people ad more things and some people add less. You can add some chili pepper, or jalapeño for spice, or not. This is the type of recipe that is kinda fail proof!

How To Make It?

Step 1:In a small mixing bowl mix together all potato cake ingredients, until well combined. Place aside.

Step 2: Into a blender add in all the sauce ingredients and pulse until smooth but some texture is left. Form potato patties/cakes and fry in a pan with oil, on medium high. For 2-3 minutes per side or until golden brown and crispy.

Serve Serve with sauce and a dollop of cream cheese or sour cream and ENJOY!

That’s it, that’s how simple it is to make! They make the perfect little snack, when your craving something very comforting. These would be great for that! You can also make it your own, by adding things like corn, chopped kale for some greens, or anything you like and think might go well.

    • 1 cup mash potatoes Do NOT use instant here
    • 1 tsp chopped parsley fresh
    • 1 tsp chopped basil fresh
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1/2 small red bell pepper
    • 1 tbsp all purpose flour
    • 1 1/2 tbsp nutritional yeast
    • 2 tbsp non dairy cheddar
    • 1 green onion chopped
    • Salt & Pepper to taste

    Chimichuri Style Sauce

    • 1/2 cup cilantro
    • Large pinch fresh parsley
    • 4 green onions chopped
    • 1/2 tsp dried oregano
    • Pinch crushed red pepper
    • 1/4 cup olive oil

    Other

    • 2 tbsp vegetable oil for cooking
