My 11 year old has been obsessed lately with mug cakes. Well, he’s really been obsessed with just about anything cooked in a mug in the microwave! The vegan mug brownie is he’s favorite but he also loves to make mug pizza. I love the fact that he love to experiment in the kitchen just like he’s momma. You know what I don’t like though? The cloud of flour the is left behind after he makes said delicious mug creations. Him and little thing 2. He’s sister who is 6, will both get into the kitchen and reck havoc on my usually freshly cleaned kitchen. It’s almost like the cleanliness attract them to make a mess. Are your kids like that too?
These mug brownies can be addicting! Don’t say I didn’t warn you when you find yourself in your kitchen at 11pm baking a single vegan mug brownie. Just standing there in your robe looking like a thief in the night trying not to make a sound so no one knows about your mug brownie addictions. Anyway, enough about me 🤣
Every microwave is different, some with higher wattage and some with lower. So your mug brownie may take longer or bake faster than my 1650 watt microwave cook time of 1 min and 10 seconds. The key is to put in in the microwave for 1 minute and 10 seconds, test it out and see if it has fully cooked. If it hasn’t fully cooked and is still too wet. Place it back into the microwave for another 10 seconds until it fully cooks.
Also, I didn’t add the powdered sugar garnish into the recipe because I only did that for blog aesthetics. You can of course dust some on if you like or even do what my little ones do and sprinkle on some sprinkles a.k.a jimmies. Do you call them sprinkles or jimmies?
Vegan Mug Brownie
- 1/4 cup flour
- 1/4 cup sugar
- 2 tablespoons cocoa powder unsweetened
- 1/4 cup water
- 2 tablespoons vegetable oil
- 1/8 teaspoon vanilla extract
- Pinch of salt
- Pinch of cinnamon
- Mix all your dry ingredients in a mug. Then mix in the wet ingredients and place in the microwave for 1 minute and 10 seconds to 1 minute and a half. Adjust to your microwave strength until it fully cooks into a brownie.
