Vegan Peanut Butter Blondies
These vegan peanut butter blondies are moist, peanut buttery and so indulging. Eat these with a dollop of ice cream or coconut whipped cream to really set these over the top.
I use to always get the blondie with ice cream dessert from Apple Bee’s and I was a huge fan. I actually think they stopped making it for some time before I even went vegan so I had been missing a blondie with some ice cream for some time now. I had been working on creating something similar for sometime now and I finally got it right. Granted the one I use to get from Apple Bee’s didn’t have peanut butter, but that was a special addition because, well I love peanut butter, hehe.

How To Make These Blondies
Step 1: Combine peanut butter, and light brown sugar. Mix until well combined, then add in apple sauce. Make sure to completely combine all these ingredients. Add in, baking powder, flour, and salt. Mix until just incorporated.
Step 2: Pour into greased 8×8 square pan. Bake for 25 minutes or until a toothpick comes out clean from the center. Remove from oven and allow to cool. (I like to eat mine a bit warm with the ice cream over top)
Serve: Cut blondie and place a dollop of your favorite ice cream over top with chopped peanuts and crumbs. All that is left to do now is ENJOY!

- Non-dairy ice cream of choice I just Ben & Jerry's P.B. & Cookies
- Chopped peanuts
- Blondie crumbs
