Vegan Pumpkin Pie
Making this vegan pumpkin pie recipe is just as easy as making regular pumpkin pie. I didn’t want to over complicate this, with a ton of different ingredients, or fancy it up in any way. I just wanted simple delicious and traditional pumpkin pie. Thatβs not too much to ask right.
The reason I bring that up is because I always do some recipe research before working up a recipe and a lot of times in plant based recipes that are modeled after a βregularβ recipe. There will be a ton of extra ingredients. Now, I totally understand that some recipes do need a bit of extra ingredients and extra attention to make that perfect plant based alternative, but some things can be kept simple. This is a great example of that.
A good example of something you have to go all out for and add lots of ingredients and extra attention to make a plant based version of something very simple to make would be my vegan steak recipe, for example. That recipe takes quite a bit of time, energy, and ingredients to make compared to the real thing which only takes minutes to make. But you have to pick your battles.
Do I need any special ingredients?
I wouldn’t really call this special, per-say because they sell it all year round and chances are you have some in the cabinet already, itβs pumpkin puree. Make sure to get the pumpkin puree, not that pumpkin pie mix. That stuff is not what you want and will not give you the same result, because the pumpkin pie mix has all sorts of different ingredients. All we need is the pumpkin puree, because we will be adding our stuff to the mix.

- 1 - 15 oz can pumpkin puree not pumpkin pie filling
- 3/4 cup Granulated sugar
- 1/4 cup cornstarch
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 cup nut milk
- 1 Shallow pie crust

- Preheat oven to 350 degrees F.
- Mix all ingredients in a large mixing bowl until everything is well combined.
- Pour mixture into pie crust and bake for 60 minutes. Center will still giggle.
- Allow to cool completely and ENJOY!

I’ll definitely be making some alcapurrias and pasteles before Christmas! Que rico! π π Ok, my real question…is this recipe for a traditional, shallow crust or a deep dish??
