Steaming Seitan vs. boiling

I get asked about boil vs. steaming all the time. Whenever I share a seitan recipe.

Some people may not realize this but seitan dough is like a sponge. Even more so than tofu, like a lot more! So, when you boil the seitan that you seasoned oh so beautifully. Water just gets sucked into it and it basically becomes a sponge. I have seen people paper towels dry the “excess” water after boiling it but there is really no going back from that. Once you boil it, it not only becomes less flavorful and bland. It also gets super chewy and spongy and I know I for one, am not a fan of that.

What you want to do instead of boiling the seitan once you have made the dough is, steam it. You don’t need a fancy steamer to do this. I don’t have one myself and I just use and raised steam rake from the Asian market with a bit of water below it, in a large pot. Place the seitan on the rack making sure that the seitan does not touch the water. I then cover it and steam it on low heat for 1 hour. That’s it no fancy steamer needed and you can stack the seitan on top of each other too. Don’t be afraid of them sticking together, surprisingly they won’t!

    Seitan Wet Ingredients

    • 1/4 tsp liquid smoke
    • 1 tbsp low sodium soy sauce
    • 1/2 cup vegetable broth

    Seitan Dry Ingredients

    • 1 tbsp nutritional yeast
    • 3/4 cup vital wheat gluten flour
    • 1/4 cup oat flour
    • 1/2 cup vegetable Broth

    Chorizo Spice Mix

    • 1 garlic clove minced
    • 1 tsp smoked paprika
    • 1 tsp ancho chile powder or chili powder
    • 1/2 tsp salt
    • 1/2 tsp dried oregano
    • 1/4 tsp ground black pepper
    • 1/8 tsp ground cumin
    • 1/8 tsp ground coriander
    • 1 tsp apple cider vinegar
    • 1 tsp taco seasoning
    • 1/4 tsp cayenne pepper

    Italian Spice Mix

    • 1/2 tsp red wine vinegar
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper
    • 1 tsp dried parsley
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp Brown sugar
    • 1/2 tsp Dried basil
    • 1/2 tsp Paprika
    • 1/4 tsp crushed red pepper flakes
    • 1/8 tsp ground fennel seed
    • 1/8 tsp dried oregano
    • 1/8 tsp dried thyme



    • Make the seitan base for each sausage flavor separately.
    • Add all wet seitan ingredients into a large mixing bowl and whisk together.
    • Also, add in the dry seitan ingredients and whisk until a dough starts to form. Knead using your hands for 4 minutes. No more, no less for the perfect texture.
    • Roll dough out into a long log. This may require a bit of squeezing in order to stretch out. Seitan dough can be a bit tough.
    • Cut the log into 4 even smaller pieces and roll each piece into sausage shape logs.
    • Roll each sausage piece in plastic wrap tightly and then roll that into aluminum foil. Twist the end like a candy wrapper and steam all for 1 hour.
    • Remove wrapping and use as you wish. Store in the fridge for up to 7 days.


    The base of this recipe is for one sausage flavor. If you would like to make both sausage flavors. Make 2 of the seitan dough mixture.
