Sweet Jalapeño Cornbread
This Sweet Jalapeño Corn Bread is incredible! It’s vegan and you would never know unless someone told you it was vegan and even then you might be skeptical.
- 1 cup cornmeal fine
- 1 cup all purpose flour
- 3/4 cup non dairy milk
- 1/2 cup white sugar
- 1 tbsp baking powder
- 1/3 cup non dairy butter melted
- 1/2 tsp salt
- 1 cup corn kernels fresh, frozen, or canned (optional)
- 1 jalapeno pepper chopped (optional)
Pre heat oven to 400F.
In a large mixing bowl combine all ingredients and mix until just combined. Do NOT over mix.
Pour mixture into a grease skillet or 8x8 baking dish and bake for 20-25 minutes or until a toothpick comes out the center clean.
Once baked, allow to cool for 15-20 minutes. Serve next to your favorite meal or alone and ENJOY!
